Mango-Roasted Flax Salsa

Serves 6. 1 serving= 1/4 cup. Recipe makes 1 1/2 cups.

Ingredients
Prep Time: 15 minutes.

1 large mango, peeled, sliced and diced
1/3 cup (75 ml) red bell pepper
1/3 cup (75 ml) green onions
1 small jalapeno pepper, seeded and minced
1/3 cup (60 g) ground Roasted Flax For Nutrition
(use a coffee grinder)
2 tbsp. (30 ml) fresh mint, chopped
2 tbsp. (30 ml) of fresh lime juice
1 tsp. (5 ml) olive oil

Directions
Mix all ingredients together. Chill for 10-15 minutes or serve immediately as a condiment with an entree (ie. grilled fish) or with tortilla chips as an appetizer.
