Roasted Flaxseed Biscotti
Yield: 24 slices

Ingredients
0.5 cup margarine
1.5 cups brown sugar
3 eggs
3 chocolate squares
2.5 cups flour
0.5 cup milled roasted flaxseed
2 .5 tsp baking powder
1 tsp salt
3 tbsp orange juice concentrate
1 tsp almond extract
0.5 cup chopped almonds
0.5 cup dried cranberries

Directions
Beat margarine with sugar and eggs.
Add melted chocolate, salt, orange juice concentrate, almond extract, almonds and cranberries. Blend well.
Add flour, baking powder and milled flaxseed and stir well.
If dough is sticky add some flour.
Divide dough in two halves.
Shape into oblong logs 2 inches wide.
Bake at 350 F for 30 minutes.
Cool just a bit and cut into 3/4 inch wide slices.
Return to baking sheet cut-side down.
Bake for 25 minutes at 350 F.
