Green Pea Soup with Mint and Roasted Flaxseed

Ingredients
6 tbsp milled roasted flaxseed
2 tbsp canola oil
2 large green onoins
1 large onion, chopped
4 celery stalks, chopped
5 cups water
½ cup salt
½ tsp crushed chilies
½ tsp pepper
1 kg frozen spring peas
1 cup buttermilk

Directions
Place flaxseed in a skillet. Cook for 2-3 minutes on medium geat.
Add oil part of green onions, onion and celery.
Saute until soft.
Add water, mint, seaoning and peas.Bring to a boil and simmer for 20 minutes.
Remove from heat and use hand blender to process until smooth.
Stir in buttermilk.
Season to taste

Yield: 8 servings
