
Creamy Zucchini Soup
Ingredients
1 Tbsp olive oil
1 onion, chopped
3 garlic cloves, minced
4 medium zucchini, shredded
2 carrots, shredded
1 Tbsp. flour
2 Tbsp. milled roasted flaxseed
2 cups milk (1%)
2 cups vegetable broth
1 Tbsp light sour cream
Freshly ground pepper
Directions
In a large pot sauté onion, garlic and zucchini and carrots over low-medium heat.
Add flour and flaxseed; stir well;
Add milk and vegetable broth gradually; stir continuously.
Simmer for 10 minutes. Sprinkle with freshly ground pepper and add ˝ tsp sour cream per serving.
