
Omega-3 bran muffin
Ingredients
¼ cup margarine
½ cup sugar
¼ cup molasses
2 large eggs
1 cup milk 1%
1 cup natural bran
½ cup milled golden roasted
flaxseed
1 cup unbleached flour
1 tsp baking powder
¾ cup cranberries
Directions
Preheat oven to 200 C or 400 F.
In a large bowl cream margarine with sugar.
Add molassesand mix well.
Add 2 eggs and milk; stir well.
In another bowl combine, bran, milled golden roasted flaxseed, flour, baking powder and cranberries.
Add flour mixture to margarine sugar mix and blend just until combined.
Fill paperlined muffin tins ¾ full.
Bake for 20 minutes.
Cool in muffin pan for 5 minutes.
Yield: 12 muffins
