Ingredients
2 egg yolk
50 g sugar
260 g mascarpone cheese
lemon rind
orange rind
2 egg white
150 g sweet biscuits
3 Tbsp milled flaxseed
50 ml sweetened espresso coffee
1 Tbsp ognac
1 tsp chocolate powder

Directions
Mix egg yolk with sugar. Add cheese, lemon and orange rind.
Beat egg white and fold under egg mixture.
In a square gratin form (12x24 cm/ 5x10 inches) arrange half of the biscuits.
Drizzle with half the sweetened coffee.
Sprinkle with 1 ½ Tbsp milled roasted flax.
Spread half of the egg-mascarpone –mixture on top.
Repeat layers.
Cool for 1 hour. Sprinkle with chocolate powder just before serving.
