Thai Roasted Flax Bean Dip
A great starter to spice up the evening! Serves 12 (1/4 cup per serving).
Ingredients
Prep Time: 10 minutes
2 garlic cloves
3 (15 oz.) black beans, rinsed and cleaned
2 roasted yellow peppers chopped
2 tbsp. (30 ml) light soy sauce
1 tbsp. (15 ml) fresh lime juice
2 tsp. (10 ml) sesame oil
1 tsp. (5 ml) turmeric
1/4 tsp. (1 ml) ground ginger
1/2 tsp. (2 ml) fresh jalapeno, chopped (without seeds)
Toppings:
1/4 cup (50 ml) Roasted Flax For Nutrition
1/4 cup (50 ml) shredded cheddar cheese
1/4 cup (50 m) cilantro
1/4 cup (50 ml) minced green onions
Directions
In a food processor drop garlic until processed. Next, add in black beans, yellow peppers, lime juice, soy sauce, sesame oil, turmeric, ginger, and jalapeno. Process until smooth.
Pour dip into a shallow pan. Add cheese and Roasted Flax For Nutrition toppings. Heat in oven at 350 degrees for 10 minutes until cheese melts. Just before serving, sprinkle cilantro and green onions over bean dip. Serve with your choice of tacos, pita wedges or assorted vegetables.
