
Roasted Flax and Oatmeal Cookies
Fast and Easy! Makes 48. One serving=2 cookies.
Ingredients
Prep Time:7 minutes
Bake Time:10-12 minutes
1 cup (250 ml) brown sugar
1/2 cup (125 ml) shortening
1 egg
1/2 cup (125 ml) molasses
1 cup (250 ml) all-pupose flour
1 cup (250 ml) whole wheat flour
1 tsp. (5 ml) salt
1 1/2 tsp. (7 ml) baking soda
1 tsp. (5 ml) vanilla extract
1 cup (250 ml) rolled oats
1 cup (250 ml) raisins, boiled and drained
1/2 cup (125 ml) roasted flax, ground
Directions
Cream sugar and shortening together in a large mixing bowl. Add in egg and molasses. Beat well. Add vanilla, and stir in rolled oats, raisins, and ground roasted flax.
Drop from teaspoon onto greased baking sheet. Bake cookies on a greased baking sheet. Bake at 375 degrees for 10-12 minutes until done.
