
Banana-Roasted Flax Pancakes
Serves 12. One serving= 2 pancakes.
Ingredients
Prep Time: 10 minutes
Cook Time: 20 minutes
1 cup (250 ml) all purpose flour
1/3 cup (75 ml) ground Roasted Flax For Nutrition
1 tbsp. (15 ml) baking powder
3 tbsp. (45 ml) brown sugar
1/2 tsp. (2 ml) salt
2 egg whites, beaten
1 cup (250 ml) skim milk
1.5 cups (375 ml) bananas, chopped or mashed
Directions
In a large bowl, combine flour, Flax For Nutrition, sugar, baking powder and salt. In a small bowl beat egg whites and milk. Combine liquid ingredients to the dry and mix. Add in bananas.
Preheat stove on high. Lightly grease pan with olive or canola oil. Use 1/3 of a cup and pour batter onto the pan. Cook pancakes until bubbles appear on surface and flip. Pancakes should be a golden brown color on both sides when finished. Serve with jam or light syrup.
