
Roasted Flax Fried Rice
Serves 6. 1 serving= 1 cup.
Ingredients
Prep Time: 10 minutes
Cook Time: 30 minutes
2 tsp. (10 ml) sesame oil
2 garlic cloves, minced
4 oz. chicken breast, cut to bite size pieces
3 cups (750 ml) of cooked brown rice
1 tbsp. (15 ml) light soy sauce
1 cup (250 ml) water
1/4 tsp. (1 ml) salt
1/4 tsp. (1 ml) black pepper
2 cups (500 ml) broccoli florets
1 red bell pepper, seeded and diced
1 cup (250 ml) frozen peas
1/4 cup (50 ml) chopped green onions
1/4 cup (50 ml) Roasted Flax For Nutrition
Directions
Heat oil in a medium saucepan over medium heat. Add garlic and saute for 1 minute. Add in cut chicken and saute until chicken is golden brown. Add cooked rice and cook for 1 minute. Add soy sauce, water and stir to coat. Add salt, pepper and bring to a boil. Reduce heat and cover.
Let simmer for 20 minutes. Add in broccoli, thawed green peas and red pepper on top of rice, cover and cook for 5 minutes till vegetables are crisp tender. Stir mixture. Remove from heat, stir in green onions and Roasted Flax For Nutrition flax seeds. Ready to serve!
