
Garlic & Roasted Flax Shrimp
Serves 4-5.
Ingredients
Prep Time: 20 minutes
Cook Time: 8 minutes
1 1/2 pounds of large or jumbo shrimp (peeled and deveined)
8 cloves of garlic, crushed and minced
3 tbsp. (45 ml) olive or canola oil
1/4 cup (45 g) milled Roasted Flax For Nutrition (use a coffee grinder)
1/4 cup (50 ml) fresh parsley
4 tbsp. (60 ml) of freshly squeezed lemon juice
Directions
In a large skillet, heat oil over medium heat for 30 seconds. Add minced garlic, shrimp and sauté, until shrimp turns pink (7 minutes).
Add parsley, ground Roasted Flax For Nutrition and lemon juice. Mix. Remove from pan and serve immediately. Serve with rice or baked potato.
