Roasted Flax & Black Bean Burrito
Serves 8. Serving size= 1/2 tortilla.
Ingredients
Prep Time: 8 minutes
Bake Time: 5 minutes
Microwave Time: 1 minute
4 x 10-inch (25 cm) flax or whole wheat tortilla shells
2 x 14 oz. (398 ml) can black beans
4 tbsp. (50g) Roasted Flax For Nutrition
1/3 cup (75 ml) fresh cilantro, chopped
1 clove of garlic
1 tbsp. (15 ml) extra-virgin olive oil
2 tsp. (10 ml) jalapeno peppers (optional)
3 cups (750 ml) of cooked wild or brown rice
2 cups (500 ml) torn romaine lettuce
1/2 cup (125 ml) low fat cheddar cheese, grated
1 cup (250 ml) diced tomatoes
Optional Condiments:
1 tbsp. (15 ml) salsa, or low-fat sour cream, or guacamole (see CanMar recipe)
Directions
In a blender or food processor, blend together black beans, Roasted Flax For Nutrition, cilantro, garlic, oil, and jalapeno peppers. Process until smooth.
Lay tortillas flat on counter. Evenly divide and spoon bean mixture down the centre on each tortilla shell. Add 1/2 cup of rice, 1/2 cup of lettuce and 2-3 tbsp. of tomatoes to each tortilla. Add 2 tbsp. (30 ml) of grated cheddar to each tortilla. Roll up.
To heat burritos, individually microwave for 1 minute or bake all 4 rolled tortillas in the oven for 5 minutes (until cheese melts). Cut tortillas in half and serve. May serve with your choice of condiment.
