Roasted Flax & Vegetable Stir-Fry
Serves 6. 1 serving= 1 cup.
Ingredients
Prep Time: 12 minutes
Cook Time: 7 minutes
1 tbsp. (15 ml) extra-virgin olive oil
2 cloves of garlic, minced
1/2 cup (125 ml) of onions, chopped
1 cup (250 ml) zucchini, chopped
1 cup (375 ml) green beans
1 cup (250 ml) fresh mushrooms, cut in
half and rinsed thoroughly
1.5 cup (375 ml) sweet potato, cut into 1-inch cubes
1 cup (250 ml) broccoli florets
1 cup (250 ml) red pepper, sliced lengthwise
1/4 cup (50 ml) Roasted Flax For Nutrition
2-3 tbsp. (30-45 ml) oyster sauce
1 tbsp. (15 ml) light soy sauce
1 tsp. (1-2 ml)ground black pepper
Directions
Heat stove on high. In a large wok add in oil. Add garlic and onions. Cook till onions become transparent. Next add in green beans, zucchini, sweet potato, and broccoli. Saute for 3 minutes.
Add mushrooms, red pepper, oyster sauce, soy sauce, and saute for an additional 2 minutes. Add in ground pepper and roasted flax. Serve immediately.
