Mediterranean Pizza with Roasted Flax

 
Mediterranean Pizza with Roasted Flax
Makes 2-12 inch thin crust pizzas. Serves 8. One serving=2 slices.

Ingredients
Prep Time: 2 hours
Bake Time: 17 minutes

Pizza Dough:
4 cups (1 L) whole wheat flour
1 tsp. (5 ml) salt
l/4 cup (50 ml) olive oil
2 packages dry yeast
2 tsp. (10 ml) honey
1 1/2 cups (375 ml) warm water

Pizza Ingredients:
1 cup (250 ml) artichokes boiled, chopped
1 cup (250 ml) no added salt tomato sauce
1 tsp. (5 ml) basil
2 tsp. (10 ml) oregano
1/2 cup (125 ml) feta cheese, crumbled
1/2 cup (125 ml) grated part-skim mozzarella cheese
2 cups (500 ml) fresh spinach, chopped
1/2 cup (125 ml) cooked italian sausage, chopped
1/2 cup (125 ml) mushrooms, rinsed and chopped
4 tbsp. (30 g) Roasted Flax For Nutrition

Directions
Pizza Dough:
Dissolve the yeast in 1/2 cup warm water and add honey. Set aside for 5 minutes.

Next, sift the flour and salt into a bowl. In the bowl, add 3 tbsp. (45 ml) of oil and the other cup of warm water. Put flour on a kneading board. Add the yeast mixture to the flour and mix the ingredients with your hands. Gather the dough together and place it on the floured board. Knead the dough, adding more flour if necessary. Knead for 8 to 10 minutes. The dough is ready when it has an elastic consistency. Divide the dough in half.

Place each dough ball in a clean bowl that has been rubbed with oil. Brush the top of the dough with the remaining oil. Cover the bowl with a clean towel and put it in a warm place for 1 1/2 hours.

Shape each dough piece either by hand or with a rolling pin, stretching out as necessary to achieve a thin dough on a 12-inch pizza pan. Bake crust in the oven at 350 degree for 10-12 minutes. Next add toppings.

Toppings:
In a small bowl add tomoto sauce, oregano, and basil. Mix. Spread tomato sauce onto each baked pizza dough. Evenly spread the spinach, artichoke and sausage. Next add mushrooms and cheeses. Sprinkle Roasted Flax For Nutrition on top. Place pizza back into the oven for an additional 7 minutes until cheese melts. Serve immediately!
